Replying to my own e-mail....
 
It appears that I will have to make use of the popmap file to do this.
 
If our production mail server has the domain prod.com.au and the IP address 10.11.12.13 and our test mail server has the domain test.com.au and the IP address 10.11.12.14, can I configure the popmap file with this information so that e-mails sent to the test.com.au domain go to the correct server?
 
If this is not possible and the redirection is user based rather than domain based, we only have 5 e-mail addresses on the test mail server so I could configure it for each of those. If that is the way to go how do I do that?
